One of my favourite comfort foods is mac and cheese. I use to live off of KD when I was a kid… Well this new and improved clean version, is way better to enjoy my favourite comfort food 🙂
Spicy Mac & Cheese Sauce
Ingredients:
- 1 Scoop Pure and Simple Quattro
- 1 Cup Raw Cauliflower
- 1 Cup Almond Milk
- 1/4 Cup Ricotta Cheese
- 1 Jalapeno
- 1 Large Avocado
Directions:
Chop up cauliflower into small cubes and slice jalapeno in half and remove seeds, place in blender. Take remainder of  ingredients and puree in blender. I swear by my vita-mix 🙂 The best for making things liquefy!
Boil up pasta of choice ( I really like Catelli Gluten free mac noodles) drain and pour into baking dish.
Pour mac & cheese Sauce onto noodles and place in oven for 15 – 20 minutes at 350 . Sprinkle cracked pepper and Parmesan cheese if desired.
