Ingredients
Dire
- Half a red cabbage shredded
- 2 large golden beats pealed and shredded
- 1 head of kale chopped finally
- 5 large radishes pealed and chopped finally
- 1 zucchini chopped
- 1 can of Black eye peas
- 1 Can of corn
- 2 cups cooked brown rice
- 3 tsp. green olives
Optional Meat if choice I used turkey in the picture
Directions:
- Cook rice in a separate dish and set aside.
- Finally mice all veggies excluding beans and corn
- Scoop out rice as needed for laying your bowl 🙂 I used 1 cup rice, 80 Grams of turkey , half cup of bean and corn mixture and 3 tsp. Olives. Then I topped it with the veggies and chowed down!!
