Ingredients

  1. Half a red cabbage shredded
  2. 2 large golden beats pealed and shredded
  3. 1 head of kale chopped finally
  4. 5 large radishes pealed and chopped finally
  5. 1 zucchini chopped
  6. 1 can of Black eye peas
  7. 1 Can of corn
  8.  2 cups cooked brown rice
  9. 3 tsp. green olives

Optional Meat if choice I used turkey in the picture

Directions:
  1. Cook rice in a separate dish and set aside.
  2. Finally mice all veggies excluding beans and corn
  3. Scoop out rice as needed for laying your bowl 🙂 I used 1 cup rice, 80 Grams of turkey , half cup of bean and corn mixture and 3 tsp. Olives. Then I topped it with the veggies and chowed down!!
