  1. Meatless Monday Stir fry

Ingredients:
1 pound of firm Tofu
Half a cup cauliflower
 
4 tablespoons tahini paste
Half cup plain Greek yogurt
One medium zucchini chopped
 
One Cup Jasmine rice
One lime squeezed
 Cracked pepper to top

 

Directions:
  1. In small bowl mix tahini sauce and yogurt  set aside
  2. Chop up tofu,cauliflower & zucchini  into small one inch pieces. Place in skillet & cover & simmer for 5-10 minutes
  3. pour yogurt over top and let simmer for 3 mins
  4. serve over rice
