Coconut Banana loaf

Ingredients:
  • 2 bananas
  • 1 1/2 Cup Coconut flour
  • 1 Scoop Pure & Simple Quattro Protein powder
  • 3 tbsp. Coconut Oil
  • 3 tbsp. Ground Flax
  • 1/3 Cup Vegetable shortening
  • 1 Egg
  • 1 tbsp. Vanilla extract
  • 1/3 Cup Greek yogurt
  • 1/3 Cup chocolate chips
  • 1/4 Cup Coconut flakes
Directions:
  1. Blend all ingredients together  with mixer and pour into non-stick baking tin. I used parchment paper to line tin for extra no stick !
  2. Bake at 350 for 45-50 mins or until golden brown.
