Cilantro Coconut Chicken

Ingredients:
  • 2 Chicken Breast
  • 1 Cup Cilantro
  • 4 tbsp. Lemon Juice
  • 2 Cups Brown rice
  • 1 Clove Garlic
  • 1 Can low fat Coconut Milk
Directions:
  1. In Blender mix lemon juice, cilantro, garlic & can coconut milk
  2. Bake chicken at 350 for 15-20 mins or until golden brown. Boil up rice and set aside.
  3. Cut chicken into small pieces mix with rice and pour sauce on top ! Enjoy!!
