What a great little day! Im over in Victoria BC visiting my husband lol I know that sounds weird but he works here quite a bit, so its nice to come back to my home town and enjoy what the city has to offer.  I can also bonus,  visit with my gal pal Kyla Gagnon and even get a  quick workout with her. Our workout was quick but effective, Kyla had one hour in between clients so we got it done 🙂

 

1mintute work 10 second recovery, 2 rounds

  • Banded Squat step outs
  • Banded pulse squats
  • Plank kick up knee Drive
  • Skull crushers
  • Bulgarian split squats x each leg
  • Dips on bench
  • V up side to side
  • Banded Glute kick backs both legs
  • Tri kickbacks

I finished up with a 30 mins on the stepper for that last little burn 🙂

In 2010 I decided to get into the best shape possible for my wedding day, and asked a friend, who was a personal fitness trainer, to help me achieve that goal. Training consisted of five days a week and at the end of the final session, I couldn’t believe the results. Never had I felt so strong and fit – I was hooked and looking forward to my first fitness competition!

After our session I headed to the grocery store to pick up meals for the week and lunch prep for Mr.C 🙂 I had a craving for Mexican so I decided I was going to put together mexi bowls. Easy, tasty and simple way to get full favors and not spend hours in the kitchen.

I picked up the following to create these bowls that made 5 containers for the week ! Perfect!

  • 1 Pack of chicken breasts
  • 2 avocado
  • 1 can black beans
  • 1 can corn
  • 1 head of lettuce
  • 1 jar of salsa ,hot please 🙂
  • Cherry tomatoes
  • 1 small red onion
  • 4 cups rice

To make this easy tasty dish is simple!!! Bake your chicken at 350 for 25-30 minuets, if I had to season it witch I would of if I had my spices but no luck, so it was just plain but still moist and the salsa and beans will give it flavor 🙂

Boiled up my rice set that aside and then heated up both cans of beans and corn in a sauce pan just to bring up the favor. I then lined the bottom of each bowl with rice, then topped it with 8tbsp. of salsa. Added the bean and corn mixture, sliced up my avocado and cherry tomatoes and added it to the party lol Then garnished with lettuce.

There’s no exact way or perfect way of building these just personal preference and feel free to add spices or cilantro one thing I forgot!! Its endless for ideas! And the great part is that your meals are healthy and ready to go for the week! No cheating on your meal plans 🙂
