Pulled BBQ Chicken LettuceWraps

Ingredients:
  • 3 Chicken Brest
  • 1 Cup Chicken broth

Sauce Ingredients

  • 2 tbsp. low sodium Ketchup
  • 2 tbsp. Greek yogurt Plain
  • 2 tbsp. Lee & perins sauce
  • 1 tbsp. Garlic Powder
  • 1 Tbsp. organic coconut  sugar
  • 1 tbsp. dry mustard
  • 5 tbsp. Tomato paste

 

Topping and Wrap

  • 2 shallots
  • 1-4 red cabbage
  • 1 head of lettuce

 

Directions

  1.  In large crock pot add on cup chicken broth and add in 3 chicken breasts. Let cook on medium until chicken is easy to tear with fork ( mine took about 2 hours)
  2. Mix all Sauce ingredients together and set aside
  3. Once chicken is easy to tear with fork shred chicken completely and place  pre spray frying pan. Add Sauce mixture and fry until chicken is well done.
  4. Cut lettuce in half and chop shallots and red cabbage finely
  5. tear off one lettuce strip and stuff with chicken mixture sprinkle on mozzarella if desired
